Curried Chicken Wrap

In a hurry? Try this nutritious curry wrap. Wraps are a great lunch for all ages and make excellent snacks too.

Ingredients:

  • 1 boneless, skinless chicken breast, cooked and shredded
  • 10 oz (284 mL) can Money’s Mushrooms, Pieces and Stems, no salt, drained
  • 1 large peeled carrot, grated
  • 2 whole green onions, minced
  • 2 tbsp (25 mL) fresh cilantro, minced
  • ⅓ cup (75 mL) plain non-fat yogurt
  • 1 to 2 tsp (5 to 10 mL) curry paste
  • 2 tortilla wraps2 large leaves curly lettuce

Instructions:

  1. Prepare the Filling:
    In a bowl, combine the cooked chicken, mushrooms, grated carrot, green onions, and cilantro. Mix until evenly blended.

  2. Mix the Sauce:
    In a small bowl, stir together the yogurt and curry paste, then fold into the chicken and mushroom mixture.

  3. Assemble the Wraps:
    Place a lettuce leaf on each tortilla. Spoon half of the chicken filling down the center of the tortilla.

  4. Wrap and Roll:
    Roll up the tortilla tightly, enclosing the filling. Repeat for the second tortilla.
